The Wingman dining room: black tile, warm bulbs, neon and an open kitchen

Our story

A small kitchen with one obsession.

The Wingman started the way most good food places do — somebody got tired of driving across town for a decent wing and decided to just make them instead.

What came out of that is a short menu and a long sauce board. Bone-in and boneless wings, hand-breaded tenders, a crispy chicken sandwich, fries done four ways, and fried mozzarella that we toss in wing sauce because someone dared us to and it turned out to be the best idea in the building.

We're a counter-service spot in a plaza on College Road. No white tablecloths, no fifteen-page menu. Just a fryer, a lot of sauce, and a crew that would rather you wait eight minutes for something hot than get something fast that's been sitting.

How we got here

The idea

Wings, not a compromise

Too many places treat wings like an appetizer they have to make. We wanted the opposite — a kitchen where the wing is the whole point, and everything else earns its place on the board next to it.

The build

3100 SW College Rd

We took a spot on College Road, put the fryers where you can see them, hung the sauce board on the wall, and kept the menu short enough that nothing on it is an afterthought.

The rule

Nothing sits under a heat lamp

Every basket is dropped when the ticket prints. It costs us a few minutes. It's the reason people come back and the reason they tell somebody about the sauced mozz.

Today

A neighborhood habit

Game days, late lunches, 100-piece family feasts and a lot of regulars who order the same thing every single time. That's the whole business, and we're good with that.
